Tomato Basil Soup
ingredients
- 2 cups carrots, sliced
- 2 cups onions, sliced
- 2 large cans whole, peeled roma tomatoes
- 1 quart chicken broth
- 4 sprigs fresh basil
- 2 cups heavy cream
- 1/4 cup olive oil
- Salt and pepper to taste
directions
Sauté carrots and onions in olive oil for 15 minutes or until soft. Add tomatoes and broth and simmer for 20 minutes over low heat. Puree soup until smooth in food processor or blender. Add cream and season with salt and pepper to taste.
