Grandma Nellie's Fruitcake
“I got the recipe from Beulah Jones in 1943, Terry’s mother, my mother in law. It’s good anytime with just raisins and nuts. I have made it almost every year since. Beulah got it from Glen Robison her brother in law.”
ingredients
- 2 cups sugar
- 2 cups hot water
- 1/2 cup butter
- 1/2 cup salad oil
- 1 cup fruit mix, any type
- 1 cup raisins
- 2 t cinnamon
- 1 t cloves
- 1 t salt
- Put all of the above in large kettle and boil 1 minute. Remove from fire. Add 2 level teaspoons baking soda. beat until cool.
- Add:
- 3 1/2 cups flour
- 2 t baking powder
- 1 cup walnuts
directions
Mix and bake in moderate oven, 325 degrees, 1 hour or until firm to touch.
