Uncle Rod's Spaghetti Bolognese
Heart Safe: low in fat and high in protein. Red kidney beans make a great substitute/addition for meat in this sauce.
ingredients
- 1 tablespoon extra virgin olive oil
- 1 onion, diced
- 1 clove garlic, crushed
- 1 carrot, shredded
- 750g can Red Kidney Beans,
- 400gms lean mince
- Tomato Paste
- 1 tablespoon brown sugar
- pasta (tubular spaghetti for me)

1. Heat oil in a medium saucepan add onion and cook till soft (low heat) add garlic and mince. Cook, continually stirring until all the mince is browned.

2. Add shredded carrot, tomato paste, brown sugar, and red kidney beans (juice as well). Stir thoroughly, adding a small amount of water/or stock, just enough so you can bring the ingredients to the boil.

3. Reduce heat to a simmer, put lid on pot, if you have one. The sauce is cooked it’s just a matter of when you wish to eat. Check occasionally and stir, add more water/stock if necessary until the pasta is ready.

4. In another pot bring water to the boil and add your favorite pasta. Serve with fresh parmesan cheese and nice bread to soak up the sauce.
