Nanna Mac's Tuna Patties
A fail safe dish. You can only burn them. And then they’re nice and crunchy. So easy, so yummy, try adding extra tastes you might enjoy – curry, mustard, chilies,
ingredients
- 1 onion, diced
- 1 carrot, shredded
- 1 large tin of tuna
- 1 small tin of salmon
- 1 egg
- 2 weet-bix
- spices to taste
- You don’t need to add the salmon or spices but it does add to the dish. Spices I like to add include, some fresh coriander, or some mustard powder, or curry paste, some tomato sauce/paste, or (sweet chili), whatever. You can get those salmon tins that come with chili etc.

1. In a large bowl mix all the above ingredients. Use your hands and get in there.

2. Grease a baking dish with some good quality olive oil.

3. Make patties from the bowl. Squeeze as much mixture from your hands out through the gap between your thumb and your forefinger – that’s the perfect size. Work the mixture around in your hands and then flatten and place in baking tray ensuring it gets a coating of oil. Continue until you use all the mixture.

4. Nanna shallow fried the patties and this can be the make or break part. Usually the break part. However, don’t tell nanna but I put them in the oven. A low heat 160 – 180 for 20 minutes one side then turn them over ensuring again that there is a little bit of oil so they don’t stick, and then maybe another 10 minutes.

The best part about this dish is that the raw materials can be eaten on their own. You’re really only heating it through – there is no worries about being underdone – you can only burn them, and as I said sometimes that works well.

Can serve with a nice salad or mashed potatoes and greens.

Depending on what you put in them a sauce is recommended – sweet chili for me, tomato for Bede and Jake.
