Yummy cake, not too sweet with a crunchy base.
2 cups brown sugar
2 cups self raising flour
100g butter
1 egg
1 cup milk
1 tsp bicarb soda
1 tsp nutmeg
chopped walnuts or pecan nuts
Combine brown sugar and sifted flour. Rub in butter until mixture resembles fine breadcrumbs. Place half this mixture in base of greased cake tin. Dissolve soda in milk, add beaten egg and nutmeg. Pour onto balance of crumb mixture and mix well. Pour into tin and sprinkle with chopped nuts. Bake in mod. oven 1 hour. Allow to stand in tin 5 minutes before turning out.
Kate and Andrew always complained that I only made this cake to take to school and would be forever hopefully that I would bring home leftovers!
