ingredients

  • SAUCE:
  • 1 Lb Italian sausage (removed from casings & tear to small pieces)
  • 1 TB parsley flakes
  • 1 clove garlic, minced (or minced white bulbs of 4-5 green onions)
  • 1 TB dried basil
  • 1 1/2 tsp salt
  • 1 (15oz) can tomatoes (diced or whole and hand crushed)
  • 2 (6 oz) cans tomato paste
  • 10 oz lasagna noodles
  • CHEESE FILLING:
  • 3 cups ricotta (cottage cheese)
  • 2 beaten eggs
  • 2 tsp salt
  • 1/2 tsp pepper
  • 2 TB parsley flakes
  • 1 TB dried oregano
  • 1 TB dried basil
  • 1/2 cup Parmesan, grated
  • 1 Lb sliced mozzarella

  • 1

    - Bring large pot of salted water to a boil

  • 2

    - meanwhile, brown sausage in large saute pan and spoon off the fat

  • 3

    - add next 6 ingredients, bring to boil, then simmer until sauce is thick (@ 45 min)

    - cook noodles in boiling water until tender and drain and rinse in cold water and hold aside

  • 5

    - in a mixing bowl, combine ricotta, eggs, S & P, parsley, oregano, basil and Parmesan and stir well to mix.

    ASSEMBLY:

    - preheat oven to 375°

  • 8

    - Use a 13“ x 9” x 2" baking dish

  • 9

    - Coat bottom with layer of sauce

  • 10

    - then top with 1/3 of noodles

  • 11

    - spread 1/2 of cheese mixture evenly and top with 1/2 of the mozzarella slices and cover with layer of sauce

  • 12

    - add next 1/3 of noodles and repeat with cheese mix, mozzarella and sauce

  • 13

    - top again with last 1/3 of noodles and top noodles with sauce.

  • 14

    - Reserve at least 1 cup of sauce for use later as needed.

    Bake at 375° for 30 minutes uncovered

  • 16

    Let stand 15 minutes before slicing

  • 17

    (can be stored in refrigerator or freezer if wrapped well after allowed to cool.

  • 18

    When reheating, apply some of reserved sauce to top before reheating in microwave or 300° oven until heated through.

can replace sausage with other ground meats or diced sauteed vegetables
