PASTA SALAD - Joe's "Hookers" Recipe
ingredients
- 1 Lb pasta (fusilli, bowtie or penne)
- 1 Lb broccoli
- 1 Lb carrots
- 2 stalks celery
- 1 Lg onion (medium dice)
- 1 jar roasted red peppers cut into strips
- 1 (12 oz) can large olives
- 1 (12 oz) can whole corn
- 1/2 cup Parmesan, grated
- 6 oz extra virgin olive oil (EVOO)
- 2 TB mustard
- 2 TB mayonnaise
- juice and zest of 2 lemons
- S & P to taste

- Bring Lg pot of salted water to a boil
- 2
- cook pasta until al dente (1-2 minutes less than package directions)

- Cut Broccoli, carrots and celery to small bite sized pieces & steam or microwave until tender

- drain corn well and pat dry and roast in saute pan until slightly caramelized, set aside to cool

- drain olives and cut into large rings

In a large bowl, combine the cooked pasta, all vegetables, lemon zest

In a small bowl, combine EVOO, Lemon juice, mayonnaise and mustard and mix well. Then add to the pasta bowl and mix well and salt & pepper to taste.

Place in large somewhat flat pasta serving bowl and top with Parmesan.
notes
Can add pine nuts and slices of cured meats to your taste. Can also use dressing of your choice.
