Sweet Potato Souffle
This is an excellent dish to serve at the holiday’s!
ingredients
- Butter Flavored Cooking Spray
- 4 Large Sweet Potatoes
- 3/4 Cup White Sugar
- 1/4 Cup + 2 TBS Milk
- 1/4 Cup + 2TBS Melted Butter
- 3/4 tsp Vanilla Extract
- 2 Eggs Beaten
- 1/4 tsp Salt
- 3/4 Cup Brown Sugar
- 1/4 Cup All-Purpose Flour
- 1/4 Cup Melted Butter
- 3/4 Cup Chopped Pecans
- 1 Cup Small Marshmallows
directions
In pot on stove, cover sweet potatoes (washed and whole) with water and boil for 20 minutes or until fork tender. Drain, allow to cool and remove skins. Preheat oven to 350°. Spray 2 quart casserole dish with butter flavored cooking spray. Place potatoes in mixing bowl and with an electric mixer, beat on low speed until potatoes start to break up. Increase speed to medium and blend until smooth. Reduce speed to low, add sugar, milk, butter, vanilla, eggs and salt. Mix well. Allow potato fibers to remain on beater and remove. Pour mixture into casserole dish. Prepare topping in a small bowl by whisking together brown sugar, flour, butter, pecans and marshmallow’s. Sprinkle mixture over potato mixture and bake for 40 minutes or until bubbly.
