The Most Amazing Thai Marinade & Dressing
Can be used as a marinade or a dressing.
100ml white vinegar
45g sugar
2 gloves garlic, peeled and chopped finely
1 cup freshly squeezed lime (or lemon) juice
½ cup Thai fish sauce (or soy sauce)
2 teaspoons light soy sauce
60g fresh corriander, chopped finely
60g shallots, chopped finely
1 red chilli, seeds removed, chopped finely
1 green chilli, seeds removed, chopped finely
Combine all ingredients and set aside until needed. The longer it rests, the better it tastes!
Perfect with prawns straight off the BBQ. Marinate steaks for ½ hour before grilling or throwing on the BBQ. Great as a salad dressing. Drizzle over fish or chicken while cooking, in fact, it is fantastic with just about anything!
