Perfect at the end of a busy day, easy to make, even easier to eat!
4 eggs
1 cup tinned Carnation milk
salt & pepper
½ tsp chicken stock
pumpkin
sweet potato
small potatoes
zucchini
broccoli
onion
½ cup water
olive oil
½ cup grated cheese
Chop veggies into bite size bits, if you are adding onion, make sure you chop it a bit finer that the rest. Put into microwave safe pie dish, spread out and add ½ cup water. Cover with cling wrap and cook for 8 minutes in microwave.
While veggies are cooking, mix eggs, milk, salt & pepper and chicken stock.
Drain veggies, spray with olive oil, mix around a bit and arrange in the same dish. Add egg/milk mix and cheese.
Cook in 180° oven for 30-40 minutes until golden brown.
Serve with shoe string fries, a crisp salad and a cool drink, preferably alcoholic!
