Penne with Tomatoes, Rocket and Chorizo
Quick and yummy pasta!
ingredients
- 400g penne
- 2 chorizo (chopped or sliced)
- 1 Spanish onion (chopped)
- 2 garlic cloves (chopped)
- 500g cherry tomatoes
- 1 jar of tomato pasta sauce (or can of tomatoes)
- Olives
- A big handful of wild or baby rocket
directions

1. Cook pasta until al dente.

2. Cook chorizo in a fry pan for about 4-5 mins or until crisp. Set aside and drain on paper towel.

3. Add onion and garlic to pan and cook for 5 mins or until tender. Add cherry tomatoes and cook for 2 mins. Then stir in the tomato sauce, cover, and bring to a simmer.

4. Drain pasta and return to pan. Add tomato sauce and chorizo to pan. Toss through olives and rocket, adding salt and pepper to taste.
