Geoff's Magical Mojitos
ingredients
- Mojitos- I did 3 pitchers of these for our party and that was for 12 people I think.
- 1/2 cup mint leaves
- 2 limes, cut into wedges
- 2 cups crushed ice
- 1 cup Lime-Mint syrup (recipe follows)
- 1 liter white rum (don’t screw around here; good rum makes a difference)
- 1/2 cup fresh lime juice
- Club soda to taste
- Muddle the mint, limes and ice in a glass pitcher. Add syrup, rum, lime juice and more ice. Now either top off with club soda or pour into individual glasses over ice and top each one off with the soda. Garnish with a lime.
- Lime and Mint infused syrup. It’s really easy to make and keeps for a while in the fridge if there is any left over (that wasn’t the case for our party)

- 2 cups water
- 2 limes, zested
- 1/2 cup mint leaves
- Bring the sugar and water to a boil in a saucepan and cook until dissolved, about 1 minute. Remove from heat and add zest and mint and let sit at room temp for 30 minutes or so. Strain out the mint and zest and store the syrup in the fridge until ready to use.
