Asian Halibut &Spinach Packetsjennifer vanden berg
Very healthy and light!
- 4(6 OZ.Halibut fillets
- 1 10oz. bag baby spinach
- 2t. minced garlic
- 4t. freshly grated ginger
- 1/2 C. dry white wine
- 4 T. soy sauce
- 1 T. sesame oil
- 1 lime zested and 2t. of the juice from the lime
Cut 4(12-inch square pieces) of aluminum foil.Spray each piece lightly with cooking spray.
Divide spinach into 4 portions and place on each foil sheet. Place 1 piece of halibut on top of spinach.
Combine garlic with remaining ingredients.
Divide liquid mixture in mixing bowl among the four packets, drizzling carefully over fish. Fold in the foil over the fish to create a little packet. pinch tightly to prevent leaking.
Put packets on a baking sheet and place in a preheated 400° oven for about 10 minutes.Remove from oven and let rest for 3-4 minutes.You may want to serve in a bowl, and open carefully because of steam from packets.
This would be great with Basmati rice, to soak up the juices from the fish!
