Garlic Butter Mashed Potatoes

ingredients

  • 2 1/2 lbs Russet potatoes, pared, cut into chunks
  • 6 large garlic cloves, peeled
  • 8 tablesppons (1 stick) butter, softened
  • 1/2 cup half and half, warmed
  • 1 tsp salt
  • 1/4 tsp freshly ground pepper
  • snipped fresh chives, optional

    1. In large saucepan, over high heat cook potatoes and garlic in boiling, salted water 10 to 15 minutes or until tender. Drain and return to pan. Shake pan over low heat to dry potatoes of excess moisture.

    2.Add butter and half and half to pan. Mash by hand or with electric mixer allowing butter to enhance the flavor of the garlic with the potatoes. Beat in salt and pepper.

    3.Transfer to serving dish. Dot with butter.
