Jalapeño Pesto
This is a recipe from Bobby Flay. He served this on top of a grilled scallop that was on a chip with guacamole. We just serve it along side grilled meat - like steak! It is HOT!
ingredients
- 1 1/2 cups cilantro leaves
- 4 jalapenos, grilled and chopped
- 1 clove garlic, chopped
- 2 tablespoons pine nuts
- Salt
- Freshly ground black pepper
- 1/2 cup extra-virgin olive oil
directions
Combine cilantro, jalapeno, garlic, pine nuts, salt and pepper in a food processor and process until coarsely chopped. With the motor running, slowly add the oil and process until emulsified. Scrape into a bowl.

When this recipe was made on Bobby Flay's t.v. show, he just added all of the ingredients to a food processor and blended. He did not slowly add the oil!
