deep dish chicken pot pie

- 3 chicken breasts with bones and skin or 2 skinless large breasts
- 5 cups water
- 3 stalks celer
- 1 small onlion quartered
- 1 bay lief
- 1/2 of 15 oz package folded refrigerated unbaked piecrusts
- 1/4 cup butter
- 1 cup fresh mushrooms
- 1 large onion or leek chopped
- 1/2 cup sliced celery
- 1/2 cup sweet red or green pepper cut into 1/2 inch pieces
- 1/3 cup flour
- 1 teaspoon poultry seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup light cream or milk
- 1/2 cup loose pack peas
- 1 beaten egg
