Clams and Mussels in a White Wine Pan Sauce
Succulent and tender clams and mussels in a light and delicious white wine sauce.
ingredients
- Clams or Mussels (can use both)
- 1 cup dry white wine
- 1 cup chicken stock
- 2 small shallots or 1 lrg, minced
- 2 cloves garlic, minced
- salt
- pepper
- 1 tsp. italian seasoning
- 5 campri tomatos, quartered and destemed.
- Cooking spray

Spray a large fry pan over medium heat.

Add garlic and shallots and sauteƩ until fragrent.

Add wine, Chicken stock, salt, pepper and italian season. Turn up heat and bring to a boil. Allow sauce to simmer until it reduces to half.

Add tomatos for only about a minute or two.

Add clams or mussles, cover and let cook until they open.

Remove clams or mussles.

Add remaing clams or mussles, if they fit, if not continue to add them to the sauce in batches.
