Liver dumplings
ingredients
- 1/2 lb beef liver
- 1 c. dry breadcrumbs
- 1 egg
- 1 clove garlic, minced
- 1/2 t. salt
- 1/8 t. pepper
- pinch marjoram
- 1 T. minced parsley
directions

Grind liver very fine, add crumbs, egg, garlic, and other seasonings. Add parsley last. Shape into small balls, (about the size of a walnut) with hands or spoon dipped in hot water.

Drop dumplings into a pot of boiling broth or boiling water and simmer for 15 minutes.

Serve with clear soup.
