Turkey Meatballs make this a Healthy and Tasty Soup!

ingredients

  • 1 Egg
  • 2 TB. Water
  • 1/4 Cup Plain Dry Breadcrumbs
  • 1/4 Cup Grated Parmesan Cheese.
  • 1 TB. Dried Parsley
  • 2 Cloves Garlic, minced
  • 3/4 tsp. Salt
  • 1/4 tsp. Pepper
  • 12 oz. Lean Ground Turkey
  • 8 Cups Low Salt Chicken Broth
  • 1 Cup Shredded Carrots
  • 3/4 Cup Acine Di Pepi(tiny pasta balls)
  • 4 Cups Chopped Escarole

    Whisk egg and water in bowl. Mix in bread crumbs and let stand 5 minutes. Add cheese, parsley, garlic, salt, pepper and Turkey. Mix gently. Using wet hands, shape into 1 inch meatballs. Place on baking sheet, cover and refrigerate for 1/2 hour.

    Bring 8 cups chicken broth to a boil in large pot. Add carrots and pasta. Reduce heat to medium and simmer about 8 minutes uncovered . Add meatballs and simmer 10 minutes. Stir in escarole and simmer until meatballs are done, (about 5 minutes).
