Italian Wedding Soup
Turkey Meatballs make this a Healthy and Tasty Soup!
ingredients
- 1 Egg
- 2 TB. Water
- 1/4 Cup Plain Dry Breadcrumbs
- 1/4 Cup Grated Parmesan Cheese.
- 1 TB. Dried Parsley
- 2 Cloves Garlic, minced
- 3/4 tsp. Salt
- 1/4 tsp. Pepper
- 12 oz. Lean Ground Turkey
- 8 Cups Low Salt Chicken Broth
- 1 Cup Shredded Carrots
- 3/4 Cup Acine Di Pepi(tiny pasta balls)
- 4 Cups Chopped Escarole

Whisk egg and water in bowl. Mix in bread crumbs and let stand 5 minutes. Add cheese, parsley, garlic, salt, pepper and Turkey. Mix gently. Using wet hands, shape into 1 inch meatballs. Place on baking sheet, cover and refrigerate for 1/2 hour.

Bring 8 cups chicken broth to a boil in large pot. Add carrots and pasta. Reduce heat to medium and simmer about 8 minutes uncovered . Add meatballs and simmer 10 minutes. Stir in escarole and simmer until meatballs are done, (about 5 minutes).
