Baked Swedish Rice

ingredients
- 1 cup rice
- 2 cups water
- 1 tsp salt
- 1 T cooking oil
- 1 quart milk
- 5 eggs, separated
- 1 T corn starch
- 1 1/2 cup sugar
- 1/2 tsp salt
- 1 tsp almond extract
- 1/2 tsp vanilla
- 1/4 tsp cream of tartar

1. Cook rice, water, salt, and oil over low heat until the water is gone.

2. Add milk and boil for 5 minutes.

3. Add the egg yolks (well beaten) and corn starch. Bring to a boil.

4. Add 3/4 cup of the sugar, 1/2 tsp. of the salt, almond extract and vanilla.

5. Pour into a large baking dish.

6. Beat the egg whites with cream of tartar until stiff. Then slowly add the last 3/4 cup of sugar. Beat well until shiny.

7. Top the rice with meringue and brown in 350 degree oven for 8-10 minutes.
