Mexican Chicken Soup
ingredients
- 1 small onion chopped
- 1 green bell pepper chopped
- 1 Tbsp canola oil
- 2 (32 oz) cans chicken broth
- 15 oz can black beans
- 15 oz can kidney beans
- 14 1/2 oz canned diced tomatoes
- 4 oz canned diced green chilies
- 1 1/2 lbs chopped chicken breast halves without skin, chopped
- 1 cup frozen corn
- 1 tsp pepper
- 1 Tbsp Mrs Dash Southwest Chipotle seasoning
- 1/2 tsp salt
- 1/2 tsp ground cumin
- 2 Tbsp chopped cilantro
- 3 Tbsp fresh lime juice

Sauté onion and bell pepper in hot oil in a large Dutch oven over medium-high heat for 5 minutes. Stir in chicken broth and next 8 ingredients and bring to a boil. Reduce heat and simmer, stirring occasionally for 20 minutes.

Remove heat and stir in cilantro and lime juice. Cool slightly and serve.
