Mexican Chicken Soup

ingredients

  • 1 small onion chopped
  • 1 green bell pepper chopped
  • 1 Tbsp canola oil
  • 2 (32 oz) cans chicken broth
  • 15 oz can black beans
  • 15 oz can kidney beans
  • 14 1/2 oz canned diced tomatoes
  • 4 oz canned diced green chilies
  • 1 1/2 lbs chopped chicken breast halves without skin, chopped
  • 1 cup frozen corn
  • 1 tsp pepper
  • 1 Tbsp Mrs Dash Southwest Chipotle seasoning
  • 1/2 tsp salt
  • 1/2 tsp ground cumin
  • 2 Tbsp chopped cilantro
  • 3 Tbsp fresh lime juice

    Sauté onion and bell pepper in hot oil in a large Dutch oven over medium-high heat for 5 minutes. Stir in chicken broth and next 8 ingredients and bring to a boil. Reduce heat and simmer, stirring occasionally for 20 minutes.

    Remove heat and stir in cilantro and lime juice. Cool slightly and serve.
