Rosemary Roast Potatoes
The perfect accompaniment to a delicious pork loin or pot roast.
ingredients
- 1 lb. Red potatoes, sliced
- 7-8 sprigs fresh rosemary, removed from stem
- 2 tbs garlic, minced
- 1 small yellow onion, diced
- Black Pepper (to taste)
- Sea-salt (to taste)
- 1 tsp dried oreganao
- 1 tsp dried basil
- 1 tsp dried thyme
- 3 tbs Olive Oil
directions
Preheat oven to 375 degrees. Slice potatoes and arrange in baking dish in single layer. Chop onion and 2 cloves garlic and combine with potatoes. Drizzle with olive oil. Add sseasonings. Sprinkle fresh rosemary over potatoes. Bake until lightly browned and easily sliced (about 30 to 45 minutes).
