Garlicky Potato and Baby Spinach Gratin
ingredients
- 1 cup heavy cream
- 1/4 cup plus 2 Tbs freshly grated Parmesan cheese
- 1 tsp kosher salt
- 1/4 tsp freshly ground pepper
- Pinch of freshly grated nutmeg
- 1 Tbs unsalted butter
- 3 ounces baby spinach (4 cups)
- 1 garlic clove, minced
- One 1/2 pound baking potato, peeled and sliced, on a mandolin, 1/16 inch thick

1. Preheat oven to 425°. Butter an 8x12 inch baking dish. In measuring cup, combine the cream with 1/4 cup of Parmesan and the salt, pepper, and nutmeg.

2. In medium skillet, melt the butter. Add the baby spinach and minced garlic and cook over moderately high heat, tossing, until the spinach is wilted, about 1 minute.

3. Spread the potato slices in the baking dish and cover with the spinach. Pour the cream over the top and shake the dish to distribute evenly. Sprinkle the remaining 2 Tbs of Parmesan over the top and bake for about 20 minutes, or until browned, bubbling and the potatoes are tender. Let rest for 5 minutes before serving.
