Simple Tomato Soup
Once you have homemade tomato soup, you will never go back to that stuff in the red can. You can add ingredients to give it a twist, or just simply enjoy the taste of ripe tomatoes.
ingredients
- 5 large, ripe tomatoes, halved
- 2 stalks celery, roughly chopped
- 2 medium carrots, roughly chopped
- 1 large onion, roughly chopped
- 2 cloves of garlic, minced
- 2-3 Tablespoons sugar
- 2 cups chicken or vegetable stock
- olive oil
- salt and pepper to taste
directions
In a large pot over low heat, add your olive oil, garlic, celery carrots, and onions. Cook for about 10 minutes, stirring occasionally. Squeeze the halved tomatoes into the pot and toss them in. Add the stock and sugar let raise the heat to medium. Let it cook for about 30 minutes until all the vegetables are soft. Puree in a blender and add salt and pepper to taste.
