Whole-Wheat Banana Nut Bread
ingredients
Bread- 2 1/2 C. whole-wheat flour
- 2 tsp. baking soda
- 1 tsp. salt
- 1 C. butter/oleo
- 2 C. sugar
- 2 C. mashed ripe banana (4-5 lg. bananas)
- 4 eggs
- 1 C. chopped walnuts or pecans
- 1/3 C. brown sugar
- 1/4 C. flour
- 1/2 - 3/4 tsp. cinnamon
- 2 T. butter oleo

Preheat oven to 350 degrees. Grease & flour 2 medium loaf pans.

In a medium bowl, stir and toss together the flour, baking soda and salt. Set aside. In a large bowl beat together the butter and sugar until blended; a hand-held mixer is useful for this step. Beat in the banana, then beat in the eggs until completely mixed; don’t worry if the mixture looks curdled - this is only because of the moisture in the mixture, and is not a flaw. Stir in the nuts. Add the combined dry ingredients and stir just until blended.

Spread evenly in the 2 prepared pans. Sprinkle with topping if desired.

Bake until a thin wooden skewer inserted in the center of a loaf comes out clean, 55-65 min. Cool in the pans for 10 min., then turn out onto a wire rack to cool completely.

Can halve the ingredients for single loaf.
