Jerry's Macaroni and Ham Salad
My son-in-law, Jerry, brought this recipe into the family. I think it was one that his mom had made for years. My mother just loves this dish and Jerry is always sweet enough to make extras whenever he can so she can have leftovers.
ingredients
- 1 pound elbow or shell macaroni
- 1 cup diced ham
- 3 thinly sliced green onions
- 1 cup cherry tomatoes, cut in halves (or more to taste)
- 1/2 cup diced celery
- Salt and pepper to taste
- Splash or two of fresh lemon juice
- Miracle Whip or Hellmann’s Mayonnaise

Cut up vegetables and ham.

Cook macaroni al dente, according to package directions. Rinse under cold water to cool and drain well.

In a large mixing bowl, toss vegetables, ham, lemon juice and salt and pepper with macaroni. Add just enough Miracle Whip or mayonnaise to coat well. Cover and chill. Store tightly covered in refrigerator.
