Mom's Best Mexican Chicken Breasts

ingredients

  • 6 Chicken Breasts
  • Shredded mexican cheese- Cheddar and Monterey Jack or if you have access Cotija crumbles are good too.
  • 1 can diced roasted green chiles
  • 1 can sliced black olives
  • tortilla chips crushed
  • 1-2 eggs beaten
  • Cumin, Mexican Oregano, Mexican Chili powder to taste
  • waxed paper
  • glass lasagna pan

directions

  • 1

    Place chicken breasts on sheet of waxed paper, put another sheet on top. Pound the shit out of the chicken breasts till flat.

    Mix cheese with chiles, olives and spices then put a little pile in center of each breast, roll chicken breast up and secure with toothpick or twine. dip in egg mixture and roll in crushed chips and set in pan. Sprinkle tops of each chicken bundle with cheese.

    bake at 375 for 35-45mins or until bubbling

    Serve with guacamole, sour cream, &/or salsa.
