Mediterranean Greek Salad
ingredients
- 3 cucumbers, seeded and sliced
- 2 cups diced roma tomatoes
- 1/3 cup diced oil packed sun-dried tomatoes, drained, oil reserved
- 1/2 red onion, thinly sliced
- 1 cup black olives, pitted and sliced (optional)
- 1 1/2 cups crumbled Feta
directions
In a large salad bowl, toss the cucumbers, roma tomatoes, sun-dried tomatoes, red onion, olives and 2 Tbsp of reserved sun-dried tomato oil. Chill until serving. When ready to serve, add Feta then toss. Makes oodles!
