  • 4 ears of corn, cut off the cob
  • 1/3 cup cilantro, chopped
  • 4 chicken breasts, grilled or poached
  • 2 avocados
  • 1 cup salsa
  • 1/2 cup sour cream
  • Cumin-Lime Dressing
  • 1/2 cup lime juice
  • 1 Tablespoon Dijon mustard
  • 2 Tablespoons ground cumin
  • 1 teaspoon garlic, minced
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 3/4 cup olive oil
  • 3/4 cup vegetable oil
