Molasses Cookies
Sugar topped molasses spice cookies perfect for the holidays!
ingredients
- 2 1/3 c flour (regular or whole wheat is fine)
- 2 t baking soda
- 1/2 t salt
- 2 t ginger
- 1/2 t cinnamon
- 1/4 t allspice
- pinch of freshly ground pepper
- 1 1/2 sticks of butter
- 1 c brown sugar
- 1/2 c molasses
- 1 large egg
- 1/2 c sugar (for rolling)

Combine first 7 ingredients in a large bowl.

Cream butter with paddle attachment of stand mixer or with hand-held mixer till smooth. Add brown sugar and molasses; beat two minutes. Add egg; beat one minutes. Reduce speed to low, add dry ingredients till flour and spices disappear.

Divide dough in 1/2, wrap in plastic wrap. Put pieces in the freezer for 1/2 hour or in fridge for one hour. Divide each section into 12 pieces. Roll into a ball in your palm, then roll in sugar. Press with glass dipped in sugar.

Bake at 350 for 12 minutes.
