Quick and Delicious Goat Cheese Salad
This was Hayley’s go-to dinner recipe when she lived in Baltimore - fast, simple, healthy, and refreshing. If you’re looking for a quick lunch or dinner, this is the best.
ingredients
- 1 bag spring mix or mesclun greens, or 1 medium head Romaine or Butter lettuce
- 2 tart apples (such as Granny Smith) or ripe pears (such as D’Anjou), sliced
- 1 large handful dried cranberries (such as Craisins)
- 2 large handfuls pecans or walnuts, toasted or candied
- 4 ounces goat cheese, crumbled
- Raspberry or red wine vinaigrette (homemade or purchased)

Pour all ingredients into a salad bowl and toss together. Serve immediately.
notes
To candy nuts: in a saute pan, heat nuts and toss with canola oil. Add sugar (1/4 cup for every 2 cups nuts) and melt over medium heat until sugar starts to caramelize and coat nuts. Season with salt, toss onto a pan lined with wax paper, and let cool.
