Spinach & Feta Puffs
These flaky puffs have a traditional Greek filling of spinach and Feta cheese. Extra filling would also be good in Fried Wontons.
ingredients
- 1/2 Cup Crumbled Feta Cheese
- 1/4 Cup Ricotta Cheese
- 1/4 Cup Freshly Grated Parmesan Cheese
- 1/4 Cup Frozen Chopped Spinach, Thawed & Squeezed Dry
- 1/4 Tsp. Nutmeg
- Salt & Pepper
- 1-2 Tbsp. Flour
- Two-Sheet Package (17 oz.) Frozen Puff Pastry, Thawed
- Milk

1) Preheat oven to 400 degrees. In a medium bowl, combine the Feta, ricotta, 2-tablespoons of Parmesan, the spinach, nutmeg, salt, and pepper. Set aside.

2) Sprinkle flour on a pasty board and unfold the puff pastry. Cut each sheet into nine 3" squares.

3) Place a heaping teaspoon of filling on 1 side of each pastry square. Fold the other side of the pastry over the filing. Seal the package with the tines of a fork. Cut a small slit in the top of each pastry so that air can escape.

4) Brush each pastry with milk, and sprinkle with the remaining Parmesan. Place the pastries 1 or 2" apart on a large baking sheet.

5) Bake approx. 20 minutes or until pastries are golden. Serve warm.
