Stuffed Peppers
Plenty of herbs and fresh garlic added to the bread crumbs make these meatless stuffed peppers a meal!
ingredients
- 4-8 banana peppers(split lengthwise and deseeded)
- 1/4 cup olive oil
- 1 onion chopped small
- 4 cloves garlic minced
- 1 medium tomato - peeled, seeded and chopped
- 1/4 cup chopped parsley
- 1/2 cup dried bread crumbs
- 2 tbsp white wine
- 1/2 tsp black pepper
- 1/4 cup goranzola cheese (small chunks)
- 1/4 cup parmesan cheese

Preheat ove to 350°. Lightly grease baking dish.

1. In a pot of boiling water, cook the banana peppers for 3-4 minutes until they begin to soften. Plunge into cold water bath.. drain well

2. Heat oil, sauteé onion and garlic. Remove from heat

3. Stir in tomato, parsley, bread crumbs, white wine, black pepper and goranzola cheese.

4. Fill the peppers, place them flat in the baking sheet. Sprinkle the parmesan cheese over the top. Bake.
