Beef with bean Sprouts
Delicious Chinese Dish
ingredients
- 1 1/2 pounds boneless sirloin or flank steak
- 2 TBS water
- 2 1/2 TBS Soy Sauce
- 2 TBS rice wine vinegar
- 1 TBS and 1 tsp. corn starch
- 1 tsp. Sesame oil
- 4" piece of seeded and shredded dried red pepper (wear rubber gloves)
- 1/2 cup shredded scallion
- 1 TBS garlic
- 1/2 tsp. salt
- 1 tsp sugar
- 3 TBS chicken stock
- 2-3 cups bean sprouts, rinsed and drained
- handful of sliced pea pods
- 6 TBS.peanut oil
- 2 tsp. oyster sauce
- 1 tsp. sugar

1. Slice beef across the grain in matchstick threads (do partly frozen, it’s easier)

2. Combine 2 TBS water, 1 1/2 TBS soy sauce, 1 TBS rice wine vinegar,1 BS corn starch, 1 tsp. sesame oil. coat meat with mixture and marinate 30 minutes (at least)

3. Combine red pepper with scallions and 1 TBS minced garlic

4. In bowl, combine 3 TBS chicken stock, 1 TBS soy sauce, 1 TBS rice wine vinegar, oyster sauce, sugar, 1 tsp cornstarch, 1/2 tsp. salt

5. Mix bean sprouts and pea pods

6. In wok, fry beef (dried out- but keep marinade) in 2 batches in 4 TBS peanut oil for 1 minute per batch, or until they change color. Transfer to plate

7. Pour off excess oil and reheat wok until very hot. add 2 TBS peanut oil and stir fry red pepper mixture until fragrant (1 minute)

8. Add broth mixture, bean sprouts and peapods, beef, remaining marinade and stir until thickened
