The perfect cake to ring in a sweet New Year.

ingredients

  • 5 large apples, unpeeled
  • 2 teaspoons cinnamon
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup vegetable oil
  • 1/2 cup orange juice
  • 1 teaspoon pure vanilla extract
  • 3 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt

    Preheat oven to 350°F. Core and slice the apples in eighths (or sixths). Place apples in a large bowl and sprinkle with cinnamon and 5 tablespoons of sugar.

    In a separate bowl, beat eggs. Gradually add remaining sugar, oil, orange juice, and vanilla to eggs. Set aside.

    In a large bowl, sift together flour, baking powder, and salt. Combine slowly with egg mixture.

    Grease a 10" tube pan and dust with flour (shake off any excess flour).

  • 5

    Pour 1/3 of the batter into the pan. Layer 1/3 of the apples on top. Repeat for 2 more layers, ending with apples on top. Bake for 1 1/2 hours, until golden on top. Let sit a few minutes before unmolding.
