Curried Hawaiian Haystacks

ingredients

Gravy
  • 1 tablespoon butter
  • 1 onion, chopped
  • 1/2 cups chopped celery
  • 1/2 to 1 teaspoon curry powder
  • 1 - 2 cups chopped, cooked chicken
  • 1 can cream of chicken soup
  • about 1/2 soup can of milk
  • hot cooked rice
Toppings
  • apple, unpeeled, chopped
  • crushed pineapple, drained
  • raisins
  • celery, chopped
  • coconut
  • almonds, toasted and chopped

directions

    Sauté onion and celery in butter for about 5 minutes. Stir in curry powder. Add undiluted soup and stir until smooth. Add milk, a small amount at a time to thin.

    Serve on a bed of hot, rice and add your choice of toppings.
