Japanese Fried Rice
ingredients
- 1 Cup Uncooked Long Grain Rice (use converted or parboiled, but not instant)
- 2 Eggs, beaten
- 1 Cup Frozen Peas, thawed
- 2 Tbsp. Finely Grated Carrot
- 1/2 Cup Diced Onion (1/2 of a small onion)
- 1 1/2 Tbsp. Butter
- 2 Tbsp. Soy Sauce
- Salt and Pepper

Cook rice following directions on the package. Pour rice in a large bowl to cool.

Scramble eggs in a small pan over medium heat. Chop eggs in small pea-size bits with spatula while cooking.

When rice has cooled, add peas, carrot, eggs and onion to bowl. Carefully toss all ingredients together.

In skillet or wok, melt butter completely; dump rice mixture into pan and add soy sauce, salt and pepper. Cook for 6-8 minutes, stirring often.

You can make a quick and easy dinner if you use leftover rice from your rice cooker, add cooked, shredded chicken and a handful of cooked, crumbled bacon. You can also try adding 1/2 cup or so of finely chopped red bell pepper to the rice before cooking.
