Zucchini and Cheese Casserole

ingredients
- 1 1/2 lbs zucchini, cut in 1/2" slices (5 1/2 cups)
- 1 lb ground beef
- 1/2 cup chopped onion
- 1 1/2 cups cooked rice
- 1 can cream mushroom soup
- 1 tsp oregano
- 1/2 tsp salt
- 1/4 tsp garlic
- 2 cups cottage cheese
- 1 cup shredded cheddar cheese

Cook zucchini until tender.

Brown ground beef and onion, drain.

Stir in rice, soup and spices.

Place half zucchini in baking dish.

Top with ground beef, cottage cheese and remaining zucchini.

Cover and refrigerate for 24 hrs.

Uncover and bake 1 hr, 15 mins at 350 degrees.

Sprinkle cheese in top.
