Zucchini and Cheese Casserole

  • Cook zucchini until tender.

  • Brown ground beef and onion, drain.

  • Stir in rice, soup and spices.

  • Place half zucchini in baking dish.

  • Top with ground beef, cottage cheese and remaining zucchini.

  • Cover and refrigerate for 24 hrs.

  • Uncover and bake 1 hr, 15 mins at 350 degrees.

  • Sprinkle cheese in top.
