Japanese Cucumber and Noodle Salad

ingredients
- teaspoons rice wine (mirin)
- 1 1/2 teaspoons low-sodium soy sauce
- 1 teaspoon rice wine vinegar
- 1 teaspoon sugar
- 1 teaspoon white sesame seeds
- 1 teaspoon black sesame seeds
- 1/2 teaspoon dark sesame oil
- 2 cucumbers, peeled, seeded and thinly sliced
- 2 scallions, diagonally sliced
- 1 cup cellophane noodles, cooked
directions
In a large bowl, stir together the rice wine, soy sauce, vinegar, sugar, sesame seeds, and oil. Add the cucumbers, scallions, and noodles, and toss to combine. Let stand for 10 minutes before serving.
