Spinach Salad with Dressing AND Greek Salad Dressing
Ymmmmm......thanks to Jackie, this one is a favorite!
ingredients
Spinach Salad- 2 tablespoons dark cider vinegar
- 1/2 cp mayo
- 1/4 cp white sugar
- 1/4 cp evaporated milk
- 1/2 lb of cooked bacon
- 2 hard boiled eggs
- 1 red onion - diced medium
- 1 bag of fresh baby spinach - washed
- 1/2 cup and 1 tbsp and 2 tsp olive oil
- 1 1/2 tsp garlic powder
- 1 1/2 tsp dried oregano
- 1 1/2 tsp dried basil
- 1 1/4 tsp pepper
- 1 1/4 tsp salt
- 1 1/4 tsp onion powder
- 1 1/4 tsp Dijon-style mustard
- 3/4 cup and 2 tsp red wine vinegar

Spinach Salad

Mix all ingredients together except eggs and spinach. Just before adding dressing to spinach – add eggs.

Serve Chilled
Greek Dressing
- 1
Mix together all ingredients except red wine vinegar. Stir well. Add red wine vinegar and mix vigorously until well blended. Store tightly at room temperature.

Pour over lettuce mixed with onion, olives and fresh feta cheese.

This dressing does not need to be refrigerated and travels well. Use it to marinade chicken also!
