Ribs In Your Own Backyard
These ribs are time consuming, but well worth the effort.
ingredients
- Ribs:
- 2 racks pork ribs preferable baby backs or loin back
- 2 cups apple juice
- 2 bay leaves
- dry rub
- 1 cup favorite Barbecue Sauce
- Dry Rub:
- 1/4 cup paprika (sweet)
- 2 tbsp. granulated garlic
- 2 tablespoon granulated onion
- 2 teaspoon peppercorns
- 1 teaspoon dry mustard
- 1 teaspoon chili powder
- 2 tablespoon cumin seed, toasted
- 3 tablespoon coriander seed, toasted
- 1/4 cup kosher salt
- 1/4 cup light brown sugar

For The Dry Rub:

Combine all ingredients in a clean coffee grinder and turn into a fine powder. Use all of recipe to completely cover ribs.

For The Ribs:

Coat ribs very liberally with dry rub, on both sides. Once covered with rub, wrap tightly in plastic wrap, and refrigerate for at least 8 hours and up to 24. The longer they stay wrapped up the more flavor they will have. Remove the ribs from the plastic and place they in a roasting pan, pour the apple juice, and bay leaves over the ribs. Cover tightly with tin foil, and place them in a preheated 200 degree oven. The ribs should cook for at least 5 hours. You should cook the ribs until they are tender (almost falling off the bone). Once the ribs are tender remove them from the oven and coat them in your favorite barbecue sauce. Place them on the grill on the side opposite the coals and continue indirectly cooking for 30 to 40 minutes. Finally, transfer the ribs to the part of the grill directly over the coals and cook for 15 more minutes, or until the dry rub is caramelized. Now is a good time to keep basting the ribs with additional barbecue sauce.
