Spicy Pico Chicken Sandwich
A great summer sandwich, make it as spicy as you want by adding more or less jalapenos!
ingredients
- 2 fresh jalapenos, chopped
- 1/2 cup red onion, diced
- 2 medium tomatoes, diced
- 1 Tbl. red wine vinegar
- 1/4 tsp. ground cumin
- 1/2 tsp. tabasco sauce
- shredded cheddar
- 2 chicken breasts (boneless, skinless)
- Cajun seasoning
- olive oil
- 4 buns
directions
Mix all veggies together, add red wine vinegar, cumin, and tabasco (feel free to add more or less than the recipe calls for) to make pico. Cut chicken breasts in half, season with Cajun spice and saute in olive oil until cooked through. Top with pico and shredded cheese. Cover skillet and cook until cheese is melted. Place in a toasted bun and enjoy!
