Light Macaroni and Cheese

Makes 6 one-cup servings

Well, it is lighter but by no means for those trying to loose weight! Nice family dinner main dish on a cold night. Serve with a green veggie, sweet potato slices and a cherry,or apple crisp. Bake the macaroni and crisp at the same time!

ingredients

  • 4 cups cooked elbow macaroni
  • 2 cups (8 oz.) shredded sharp cheddar cheese
  • 1 cup 1% low-fat cottage cheese
  • 3/4 cup nonfat sour cream
  • 1/2 cup non fat milk
  • 2 Tbles. minced fresh onion
  • 1 1/2 teas. butter
  • 1/2 teas. salt
  • pepper to taste
  • 1 egg, lightly beaten
  • Topping: 1/4 cup bread crumbs
  • paprika and 1 Tbles. melted butter

    Preheat oven to 350 degrees.

    In a large mixing bowl, combine the first 10 ingredients; stir well to fully blend.

    Spoon into a buttered 2-quart casserole.

    Mix the topping ingredients well and sprinkle evenly over the top of the unbaked casserole.

    Cover and bake at 350 degrees for 30 minutes. Uncover; bake at least 5 minutes longer or until set.

notes

I like to use Ritz Crackers for the topping instead of the bread crumbs.
