Grandma Swaim's Fruitcake
Grandma Swaim made Fruit cakes every year at Christmas. Now Aunt Bobbie has taken over the Fruit cake baking duties. This cake is good because of the “secret” ingredient.
ingredients
- 1 lb Butter
- 2 lb flour
- 2 lb sugar
- 2 lb raisins
- 2 lb currants
- 1 lb figs
- 1 lb citron
- 1 lb dates
- 1 lb cherries
- 1 cup pecans
- 1 cup sweet pickle juice
- 1 dozen eggs
- 1 tablespoon cinnamon
- 1 tablespoon cloves
- 1 tablespoon nutmeg
- 2 Tablespoons baking powder
directions
Bake in tube pans for 4 hours at °250. Grandma left out the figs and added more nuts and sometimes a jar of apricot preserves or orange marmalade. Recipe makes about 15 lbs of fruit cake. She usually baked in 3 or 4 pans.
