Fresh Banana Cake
Linda made this for our church Bible studies and Richard loved it.
ingredients
Cake- 1 1/2 cup sugar
- 1/2 oil
- 2 eggs
- 1 tsp vamilla
- 3 ripe bananas (mashed)
- 2 cups self-rising flour
- 1 tsp baking soda
- 4 Tblsp buttermilk
- 1 cup chopped pecans
- 1 stick butter
- 1 box confectioner’s sugar
- 1 mashed banana
- 1 cup pecans
directions
Cake
Stir together sugar, oil, eggs and vanilla. Add bananas. Mix well. Add flour, soda and buttermilk alternately. Bake in greased and floured pan at 350° and about 35 minutes.
Glaze
Melt butter. Add sugar. Stir vigorously until smooth. Add mashed banans. Add pecans. Ice cake while still warm so icing dribbles over the edges.
