Chicken and Cashews
ingredients
- 1 1/2 pound chicken fillets (cut into uncooked bite size pieces)
- 2 tablespoons cooking sherry
- 2 tablespoons soy sauce
- 1 tablespoon Worcestershire sauce
- 1/2 tsp black pepper
- 1 tsp sugar
- 2 tsp cornstarch
- 1 can cashews (rinsed off).
- 1 can sliced water chestnuts

Mix marinade ingredients and pour over chicken and stir together. Make sure all the chicken is submerged in marinade. Let marinade for at least 1 hour.

Wash salt off 1 can of cashews and set aside.

Drain water from a can of sliced water chestnuts and set aside.

Heat approx. 1/2 cup of cooking oil in wok on high heat.

Stir fry chicken (including marinade) until chicken is done.

Pour in cashews and water chestnuts, stir together and let sit for a few minutes.

Serve with white rice.
