Spicy Garlic Chicken Cups
ingredients
- 16 oz Chicken Breast
- 1/2 C sliced green onions
- 2 cloves garlic, minced
- 2 T soy sauce
- 2 T rice wine vinegar
- 2 T olive oil
- 1/2 t crushed red pepper
- 1/4 t ground black pepper
- 1 T corn starch
- 1 1/2 C shredded Monterey jack
- 1 1/2 C shredded Mozzarella
- 1 Package Wontons
- Pam Cooking Spray

Preheat oven to 350 degrees.

Rinse Chicken, pat dry, cut into 1/2 inch chunks. Combine 1/2 of the green onion, the garlic, soy, vinegar, 1T of the olive oil and the red and black pepper. Add the chicken, stir to coat, and let stand for 1/2 hour. Drain, reserving marinade.

Heat remaining oil in skillet and add chicken chunks. Cook and stir until no longer pink, about 3 minutes. Stir cornstarch into reserved marinade. Add to skillet. Cook and stir until thickened and bubbly. Refrigerate to cool.

Spray mini muffin tin with Pam. Press wontons into muffin tin and spray with Pam again, if desired (to give wontons extra crispiness). Mix together the 2 cheeses. Layer wontons with cheese, chicken, more cheese, green onion. Bake at 350 degrees for 6 minutes or until lightly golden.
