Red Raspberry Flummery
ingredients
- 1 1/2 lbs Raspberries -- or blackberries or b
- 1 tbsp Lemon Juice -- freshly squeezed
- 1/2 C Water
- 3/4 C Sugar
- 1/3 C Tapioca
- 3 tbsp Cointreau -- or orange-flavored l
- 1/2 tsp Grated Lemon Peel
- 1/2 tsp Vanilla Extract
- Sour Cream -- optional
- Slivered Almonds -- optional
directions
Wash, and drain berries; whirl in blender to make 3 1/2 cups puree.
Transfer the puree to a 3-quart pan. Stir in the lemon juice, water, sugar, and tapioca; let stand 5 minutes to soften tapioca. Place mixture over medium-high heat and bring to a full rolling boil, stirring constantly; remove from heat and stir in the Cointreau, lemon peel and vanilla extract until well blended. Let cool 15 minutes.
Transfer to a bowl; cover and refrigerate until softly set or at least 2 hours.
To serve, spoon into clear serving containers. Garnish with sour cream and almonds.
