Canadian Mountain Stew
ingredients
- 3 lbs. stewing beef, cubed
- 8 cups water
- 4 oz beef gravy base
- 3 oz flour
- 1 1/2 cups carrots, cubed
- 1 1/2 cups celery, cubed
- 1 1/2 cups onion, cubed
- 1 1/2 cups turnip, cubed
- 1 1/2 cups potato, cubed
- 1 cup whole mushrooms canned or fresh
- 1/2 cup red wine
- 1/4 tsp. paprika
- 1/4 tsp. oregano
- 1/4 tsp. black pepper
- 1/4 tsp. basil
- 1/4 tsp. thyme
- 1 bay leaf

In a large pot over a high heat, brown meat until cooked completely through. Reduce heat to medium. Stir in flour and allow to cook into beef cubes.

]In another pot, dd beef base to water and bring to a boil. Add to meat and stir until flour is well mixed in.

Skim off any fat or lumps from surface.

Add the vegetables, except for the potatoes, and cook on a medium heat until about half done. Add the potatoes and spices and simmer until vegetables are cooked through.

Then add the red wine and mushrooms. Simmer for about 5 minutes. If further thickening is desired, stir in a mixture of 2 tbsp.(30 ml) flour and 2 tbsp.(30 ml)red wine.

Remove bay leaf and serve immediately.
