Strawberry & Pineapple Salad

The “heated” part of this makes it especially smooth & creamy.

ingredients

  • 1 Large Can Crushed Pineapple - not drained
  • 16 oz. cottage cheese
  • 1 large box strawberry jello
  • 1 large cool whip

directions

    In small pan, heat the crushed pineapple until almost boiling.

  • 2

    Add the jello powder & stir well until dissolved.

    Remove from heat & place in serving bowl. Fold in cottage cheese to warm pineapple mixture - stir well.

  • 4

    Fold in cool whip. Place in refrigerator to set.

My Dad, Orlando, absolutely loved this salad. In fact, the night before he passed away, he was in the hospital and asked me to make it for him and bring it the next day. I made it but he was gone early the next morning.
